Mexican Ring Cookies!


Since I first made these for a food day in Spanish, they have been a big hit. They are delicious and cute (they look like little donuts:))! This recipe makes 12, but I usually double it because they disappear so fast!

Ingredients:
1 1/2 cups flour 2/3 cup white sugar
1/2 teaspoon baking powder 3 egg yolks
1/2 teaspoon salt 1 teaspoon vanilla extract
1/2 cup butter Colored Sprinkles (jimmies)

1. Preheat your oven to 375 degrees F. Lightly grease cookie sheets.
2. Mix together your flour, baking powder, and salt.
3. Cream together the butter and sugar. Add the egg yolks and vanilla, beating until light and fluffy. Mix in the dry ingredients.
4. Shape dough into 1 inch balls. Make hole in the center of each ball and form into a ring. (I recommend holding the ball between your thumb and pointer finger and push your fingers together then form the ring. This step does take some time, so get some friends to help!)
5. Dip top of ring into sprinkles. (If you like a lot of sprinkles, you can pour extra on top!)
6. Bake at 375 degrees F for 10 to 12 minutes. Remove from baking sheets and let cool on racks.
