Dessert Recipe of the Week



Halloween is just around the corner, so why don't you try a new festive dessert? This recipe is one that my mom makes us every year around this time and is extremely delicious!

Pumpkin Bars

For the bars you'll need:

  • 4 eggs
  • 1 cup vegetable or canola oil
  • 1 2/3 cups sugar
  • 2 cups flour
  • 2 cups pumpkin
  • 2 tsps. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda

Mix all ingredients until smooth and pour into a sheet pan.
Bake at 350 degrees for 20 to 30 minutes.



For the frosting you'll need:

  • 3 oz. cream cheese
  • 1/2 cup oleo (or butter)
  • 2 or 3 cups powdered sugar
  • 1 tsp. vanilla

Mix the frosting ingredients until smooth. Once bars are cooled, spread evenly over the top.

(Makes 20-30 bars)
