Think Spring!

It's now officially spring! Now that the weather is starting to get nicer, try these festive cupcakes!

Flower Cupcakes in a Cone

You'll need:

  • 1 box of any cake mix of your choice

  • Flat bottomed ice cream cones

  • White frosting (& food coloring if desired)

  • A few bags of large gumdrop disks

  1. Mix the cake batter as instructed on the box. Fill each narrow bottom of the ice cream cone with batter. Carefully place each cone on a baking sheet and put it in the oven, being careful not to tip any over.

  2. Bake for 25 minutes (or until a tooth pick can be inserted in the middle and come out clean) at 350 degrees. After they cool, frost the tips.

  3. For each candy flower, cut 6 wedges from the edges of the gumdrop disks. Cut a green gumdrop disk into slices for the leaves. Press the wedges into the center of the cut flowers for flower centers. Arrange the candies on top of the cupcake.

Makes about thirty cupcakes (on average).

Happy Spring!
